Granita:
1/2 cup freshly brewed espresso coffee
1 1/3 cup hot water
4 Tbsp. granulated sugar
Sprigs of fresh mint
Freshly whipped cream
Directions:
Mix espresso, hot water and sugar. Stir until all sugar is dissolved.
Pour into a shallow, non-aluminum pan and place in the freezer. Remove in one hour and stir it, breaking up any accumulated ice. Repeat every half hour for about two hours or until granular chunks of "Slushy ice" has formed.
Serve in decorative glasses with a garnish of a mint sprig and a dollop of whipped cream. Serves two. Enjoy! -Diana
