1 cup sugar
1/2 cup light corn syrup
1/4 tsp. salt
1.5 cups unsalted dry raosted peanuts
1 tsp. butter
1 tsp. pure vanilla extract
1 tsp. baking soda
Extra butter for greasing
Directions:
NOTE: This recipe can burn you if you are not very careful! Assemble all ingredients and supplies beforehand and focus.
Line a 9 x 13 inch pan with foil. Butter the foil and butter a metal spatula. Combine sugar, corn syrup and salt in a large microwave-safe Glass bowl (preferably with a handle). Stir in peanuts. Microwave on high for 4 minutes. Stir with a wooden spoon and microwave another 4 minutes. Mix will be boiling. Add 1 tsp. of butter and the vanilla and microwave for 2 minutes. Add the baking soda and stir until light and foamy. Working quickly, pour into foil-lined pan, scraping bowl, and spread out with buttered spatula. Let stand until cool; about 1 hour. Peel brittle off the foil and break into pieces. Store in an airtight container in a cool place. Enjoy!
