Welsh Cookie recipes

Ingredients: Metric Units
4 cups all-purpose flour,
1 cup sugar,
3 tsp. baking powder,
1/4 tsp. salt,
1/2 tsp. FRESH nutmeg,
3/4 cup currants (that's 1/2 a box),
3/4 pound (3 sticks) butter or margarine,
2 large, well beaten eggs,
Milk if needed
Superfine sugar for dusting
Directions:
Thoroughly mix the flour, the sugar, the baking powder, the salt, the nutmeg and the currants together. Blend in the butter with a pastry blender until mixed well. Add the eggs, and blend into the dough. This will make a stiff dough. If ABSOLUTELY necessary, add 1-2 Tbsp. milk. Roll portions of dough onto a floured surface and cut into rounds with a doughnut cookie cutter or biscuit cutter. Heat a griddle to a very moderate temp. and bake the cookies on one side. When they appear to have risen and are "shiny" on the surface, then turn over and bake on the other side. If not brown enough on either side, turn over and bake until light brown.
Cool on a cookie rack and dust with SUPERFINE sugar (NOT confectioner's! Cookie will become gummy). These cookies freeze well. Enjoy! -Diana
