6 eggs
3.5 cups flour (approx.)
1.5 cups sugar
1 cups (1/2 pound) Margarine
4 tsp. baking powder
2 Tbsp. vanilla or anise
Pizzelle iron
Powdered sugar for dusting
Directions:
Beat eggs, adding sugar gradually. Beat until smooth. Add cooled melted margarine and vanilla or anise. SIFT flour and baking powder and add to egg mix. Dough will be sticky enough to be dropped by a spoon. Put dough in center of each pizzelle iron flower by a heaping teaspoon (a drinking teaspoon, not a measuring one). Close lid. It will start to steam, and lift cover up as soon as steam lets up and cookie is golden colored. Place pizzelles on a cutting board or glass tray and add sifted powdered sugar right away. Pile the cookies up as you make them. Enjoy! -Diana
