1 cup flour
1 Tbsp baking powder
1 cup warm milk
3 Tbsp maple syrup
1/2 cup blueberries
Dash of salt
Like blueberry pancakes you can eat with your fingers.
In a medium bowl, combine all ingredients and mix until just combined. (Don't overmix!)
Drop by spoonfuls into muffin tins.
Bake at 375 F for 20 minutes.
(If you use mini-muffin tins, bake only 10 minutes. A great breakfast treat!)
Once the batter has been spooned into the muffin tins, decorate with decorative sugar, like pearl sugar or colored sugar. Or sprinkle with cinnamon sugar.
Alternately, sprinkle with powdered sugar just after removing the muffins from the oven.
