1/2 small red cabbage
2 tsp. vegetable oil
1 granny smith apple, finely chopped
1 medium onion, finely chopped
1/2 cup unsweetened canned pineapple chunks or tidbits, drained and juice reserved
2 Tbsp. unsweetened pineapple juice from the aforementioned can
2 Tbsp. white vinegar
salt and pepper to taste
Remove center stalk from the cabbage, and slice the cabbage finely.
Heat oil in a large frying pan. Add cabbage, apple and onion and cook over a low heat for 5 minutes.
Add pineapple pieces, pineapple juice, vinegar, salt and pepper, cover and simmer for another 10 minutes. Serve hot. Serves 6. Enjoy! -Diana
