8 ounces dried black figs (Good luck finding these!)
8 ounces dried apricots
1/2 cup orange juice
2 Tbsp. lime juice
1/4 tsp. vanilla extract
1.5 cups nonfat plain yogurt
1 Tbsp. maple syrup (what's maple syrup doing in an Italian dish? Ask Nonie!)
1/4 tsp. grated nutmeg
1 Tbsp. grated lime rind
Directions:
Remove and discard the stems from the figs.
In a 2-quart saucepan, combine the figs, apricots, orange juice, lime juice, and vanilla. Simmer gently for 7 minutes or until the fruit is just beginning to plump. Remove from heat, cover and refrigerate overnight.
Spoon the yogurt into a cheesecloth-lined sieve. Place over a bowl and allow to drain until thick (about 2 hours on a less-cool day).
Transfer to a small bowl, stir in the maple syrup, nutmeg and lime lind. Serve the figs/apricots with the yogurt mix. Serves 6. Enjoy! -Diana
