2 1/2 lb. potatoes
4 slices bacon
1/2 small head of cabbage
1 onion
1/2 c. milk
salt, pepper to taste
1/4 c. butter
Directions:
A classic Irish dish you can make on a shoestring --
Peel potatoes and cut into cubes.
Place potatoes in a large pot of water (enough water to cover the potatoes). Bring to a boil and allow to cook 15-20 min., until potatoes are fork-tender.
Meanwhile, heat a skillet over medium-high heat and cook bacon. Once bacon is done, remove from skillet. Drain, and crumble into bacon bits.
In the bacon drippings, saute cabbage and onion until soft and translucent.
When potatoes are done, drain. Mash cooked potatoes with milk. Season with salt, pepper. Stir in bacon, cabbage and onions. Cut butter into small pieces, then stir until melted.
