Gluten Free Flour Mix.
In the bowl of a heavy duty mixer, combine flour mix, sugar, xanthan gum, milk powder, and salt.
Dissolve 2 tsp. sugar in 1/2 c. lukewarm water. Add the yeast to the water. (Make sure the water isn't too hot - it should be right at body temperature, like a baby's bottle.) Set aside.
In a saucepan, combine shortening and 1 1/4 c. water. Heat until shortening melts.
In the mixer bowl, blend dry ingerdients and slowly add shortening mixture and vinegar. Then add eggs. The mixture should be slightly warm (not hot).
Pour the yeast mixture into the mixer bowl and beat well.
Remove beater. Allow dough to rise in a warm place, covered with a towel, about 1 hour or until doubled.
Return bowl to the mixer. Beat on high for 3 minutes.
Spoon dough into 3 small greased loaf pans or 1 large one. Or bake rolls in a muffin tin.
Let rise until dough is slightly above the top of the pan.
Bake at 400°F for 10 minutes. Then place foil over the bread and bake a large loaf 50 min. longer. Bake small loaves slightly less. Bake rolls about 25 min.
