1 c. soy flour
1/2 c. potato starch flour
1/4 c. rice flour
3/4 tsp. baking soda
1 1/4 tsp. cream of tartar
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs, well beaten
1/2 c. mashed bananas
1/2 c. chopped walnuts
Directions:
Bake banana bread and the lads will look at you as a miracle worker - turning old bananas into magic bread! Here's an alternative for the wheat-free folks.
Sift together soy flour, potato starch flour, rice flour, baking soda, cream of tartar, and salt. Set aside.
In a mixing bowl, cream shortening. Gradually add sugar, beating until light and fluffy. Add eggs. Beat well.
Add dry ingredients alternately with the mashed banana, a little at the time. Beat after each addition until smooth.
Stir in chopped nuts. Pour into well greased 8x4 loaf pan.
Bake at 350°F for 1 hour.
Let cool in pans 10 minutes, then turn out onto a rack to cool completely.
To store, wrap in foil and store in the refrigerator.
