1 c. butter or margarine
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. soy flour
1/4 c. rice flour
1 tsp. baking soda
1/2 tsp. salt
12 oz. pkg. butterscotch chips
Directions:
Try this chip-tastic cookie with chocolate chips too!
In a large bowl, cream butter, brown sugar, eggs, and vanilla.
In a medium bowl, sift together soy flour, rice flour, baking soda, and salt. Add gradually to butter mixture.
Stir in chips.
Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 350°F for 10 min.
Makes 3 doz.
