No-Wheat Butterscotch Brownies

1/2 c. margarine
2 c. brown sugar, firmly packed
1 tsp. vanilla
1 c. rice flour
1/2 c. soy flour
2 tsp. baking powder
1/2 tsp. salt
1 c. finely chopped nuts
A scrumptious moist - and wheat-free - bar cookie.
Preheat oven to 350°F.
Cream margarine and brown sugar.
Add vanilla and eggs. Beat until light.
Sift together flours, baking powder and salt. Add gradually to egg mixture.
Mix until blended, then stir in nuts (if you fancy them).
Spray a 9x13 rectangular baking pan with nonstick spray, then spread it evently with the batter.
Bake at 350°F for 25-30 min., until top is light borwn.
Cool 10 minutes before cutting into bars.
