1 1/2 c. rice flour
1/2 c. potato starch flour
1/4 c. tapioca flour
1 tsp. salt
1 Tbsp. sugar
1 tsp. xanthan gum
3/4 c. shortening
2 Tbsp. rice vinegar
2 Tbsp. cold water
Don't deny yourself pie just because you're eliminating wheat from your diet!
Note: White vinegar can be a "stealth" source of gluten. Since many white vinegars are distilled from grain, they may contain traces of gluten. Use rice vinegar instead: it contains no gluten and its mild taste won't skew your recipe.
Using a pastry blender or a fork, cut in the shortening.
In a separate bowl, blend together egg, vinegar, and cold water. Stir into flour mixture. It will seem very moist, if you're used to making pie dough - don't sweat it.
Shape the mixture into a ball. Cut in half. Roll each between 2 sheets of plastic wrap to create a crust.
To place it in the pie plate, remove the top sheet of plastic wrap. Invert and drop it onto the pie plate. Shape it into the curves of the pie plate before removing wrap. Bake as indicated for your pie.
