1 c. rice flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
2 eggs
2 Tbsp. vegetable oil
Directions:
Grab the maple syrup and invite folks over for a wheat-free brunch! Double this recipe if you're expecting a crowd. Or if you really like pancakes.
Sift together rice flour, sugar, baking powder, baking soda.
Beat eggs together with buttermilk and oil. (If you don't have buttermilk, curdle regular milk with white vinegar.) Add the wet ingredients to the dry and beat just enough to combine.
Heat a griddle on high heat. Griddle is hot enough when water droplets dance when dropped on the griddle. Drop batter onto griddle and cook until top is full of bubbles. Flip and brown on the other side.
