Gluten-free waffles that the whole family can enjoy. This recipe only makes 3-4 waffles, so double it if you're waffle lovers.
For the flour mix, substitute just rice flour.
Or try 3/4 c. rice flour with 1/2 c. cornflour.
Into a large bowl, sift flour mix
, buttermilk powder, baking powder, baking soda, salt, sugar.
Using a pastry blender or fork, cut the shortening into the flour until the mixture is very fine. (No big lumps of shortening.)
In a separate bowl, beat eggs with water.
Add egg mixture to flour mixture. Beat only until just combined.
Bake on a hot waffle iron.
