No-Wheat Cheese Ball


Ingredients:
1/2 c. grated cheddar cheese 1 8oz. package of cream cheese 1/4 c. mayonnaise 1/2 c. minced onion dash salt 1/4 c. pecans, chopped
Directions:
If you're a careful label-reader &ndash and if you have celiac disease, you have to be &ndash you know that store-bought cheese balls have off-limits gluten containing fillers. Make your own and enjoy! Note: Be sure onion is chopped very finely - or substitute a bit of onion powder.
Also note: Be aware that mayonnaise is made with vinegar (often distilled from grain) and so can have traces of gluten. Test your favorite brand for yourself or buy a "gluten free" brand. Blend cheddar cheese, cream cheese, mayonnaise, onion, and salt. Form into a ball and refrigerate until firm. Remove from refrigerator and roll in chopped pecans. Store in refrigerator until ready to serve. Serve with rice crackers.
