1/2 c. grated cheddar cheese
1 8oz. package of cream cheese
1/4 c. mayonnaise
1/2 c. minced onion
1/4 c. pecans, chopped
If you're a careful label-reader &ndash and if you have celiac disease, you have to be &ndash you know that store-bought cheese balls have off-limits gluten containing fillers. Make your own and enjoy!
Be sure onion is chopped very finely - or substitute a bit of onion powder.
Be aware that mayonnaise is made with vinegar (often distilled from grain) and so can have traces of gluten. Test your favorite brand for yourself or buy a "gluten free" brand.
Blend cheddar cheese, cream cheese, mayonnaise, onion, and salt.
Form into a ball and refrigerate until firm.
Remove from refrigerator and roll in chopped pecans. Store in refrigerator until ready to serve.
Serve with rice crackers.
