No-Wheat Cheese Sticks More Recipes Like This


Ingredients: Metric Units
1/2 lb. cheddar cheese
2 Tbsp. butter or margarine
1 egg
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. rice flour
1/4 c. potato starch flour
1 tsp. xanthan gum
Directions:
A fun gluten-free cracker - many times good!

Grate cheese (A 1/2 lb. brick of cheese makes about 2 c. grated.) Set aside.

Place butter in bowl of mixer and cream. Add egg, salt and pepper and beat until blended.

Beat cheese into mixture a batch at a time until incorporated.

Add rice flour, potato starch flour and xanthan gum, beating until well combined.

Work the dough into a ball, adding a little water if the dough's too dry to hang together.

Divide the dough in half for rolling out. Roll between sheets of waxed paper or plastic wrap, rolling each half out to a 7x14 in. (17.8x35.5cm) rectangle, about 1/8 inch (.3cm) thick. Cut into 7x.5 in. (17.8x1.25cm) strips. Place strips on a baking sheet.

Bake at 400F for 6-8 minutes, until golden. Remove from baking sheet and cool completely on a rack.
