No-Wheat Elegant Cheese Puffs More Recipes Like This


Ingredients: Metric Units
4 oz. cheddar cheese
1 c. water
1/2 c. butter or margarine
1/8 tsp. nutmeg
1 c. potato starch flour
4 eggs
Directions:
An elegant gluten free appetizer. Simple, but you needn't tell your guests that!

Grate cheese (about 1 c.). Set aside.

Place water, margarine or butter, and nutmeg in a 2-quart saucepan. Bring to a boil over medium heat.

Turn off heat and add flour all at once. Stir until the mixture leaves the sides of the pan and forms a ball. Remove from heat.

Add eggs, one at a time. Beat well after each egg. Stir in 1/2 c. cheese. Drop by small spoonfuls onto a greased baking sheet. Sprinkle with remaining cheese.

Bake at 400F for 20-25 minutes until golden brown. Remove from oven and prick with a fork. Return to the turned-off oven for 5 minutes (this crisps them nicely). Serve warm.
