Chen's Tangy Lemon Squares More Recipes Like This


Ingredients: Metric Units
Base
1 c butter, softened
1/2 c powdered sugar
2 c flour
1 tsp vanilla
1 Tbsp lemon juice
zest of 1 lime (optional)
zest of 1/2 lemon (opt)
Topping
4 eggs
2 c sugar
1/3 c lemon juice
1 tsp baking powder
1/8 c flour
2 Tbsp powdered sugar for dusting
Directions:
Cream butter, 1/2 c powdered sugar until fluffy. Add 2 c flour, beat until blended. Mixture will resemble coarse meal. Add vanilla, lemon juice, zest. Press evenly into well-greased 9"x13" baking pan. Bake at 350 for 20 minutes.
Beat eggs until light and foamy. Add sugar. Beat until thick and blended. Add lemon juice, flour, baking powder. Beat until blended. Pour over baked crust. Bake at 350F for 25 - 30 minutes, until golden. Sprinkle with powdered sugar.
