1/2 c. chopped arugula
3/4 c. shredded cheese
1 garlic clove, crushed
salt and pepper to taste
3/4 c. plain yogurt
Directions:
A light refreshing Swedish salad - a big hit at Helen's book club dinner!
Yield: 2 servings
To stretch it, add more arugula. If you can't find arugula in your produce aisle, try substituting spring mix.
Combine all ingredients. Chill before serving.
