Swedish Dreams

Ingredients:
1 c. butter, softened 2/3 c. sugar 2 tsp. vanilla 1 12 tsp. baking powder 2 1/4 c. flour
Directions:
These tiny bites of cookie are something of a Swedish shortbread, buttery and crisp. If you're making them at Christmas time, sprinkle with a little colored sugar for a festive touch. Yield: about 5 doz. small cookies Preheat oven to 300°F. In a mixing bowl, beat together butter, sugar and vanilla until light and fluffy. Into a medium bowl, sift together baking powder and flour. Gradually add to the butter-sugar mixture. Have faith and keep beating - it may not look like the dough will take up all that flour, but it will come together. Form the dough into a rectangular log. Cut the log into three pieces. With the each piece, you'll make 24 cookies. Here's how: •Cut the first piece in half. •Take the first half and cut that into 4 pieces. •Cut each of those 4 pieces into 3 each. Roll these little pieces of dough into balls, then press gently with your finger. Go ahead and place them fairly close together; these don't spread much. Repeat the procedure with the remaining dough to form about 5 doz. cookies. Bake at 300°F for 15-18 min., until just starting to get golden brown on the edges.
