Crockpot Lemon Herb Roasted Chicken


Ingredients:
3-4 lb. chicken 1/4 c. onion, chopped 2 Tbsp. butter 3 Tbsp. lemon juice (or squeeze juice of 1 lemon) 1/2 tsp. salt 1 Tbsp. parsley 1/4 tsp. thyme 1/4 tsp. paprika
Directions:
Long, slow cooking makes this chicken super tender. Rinse chicken well and pat dry. Place onion in the cavity of the chicken and rub the skin with butter. Place chicken in crockpot. Squeeze lemon over chicken. Sprinkle with salt, parsley, thyme, and paprika. Cover. Cook on Low: 8-10 hours High: 4-5 hours
