Cinnamon Snack Cake

Ingredients:
1 c. butter (2 sticks, 1/2 lb.) 1 c. sugar 1 tsp. vanilla 2 eggs 1 c. flour 1 c. cornstarch 1 tsp. cinnamon 1/2 tsp. baking powder 1/4 c. milk Topping 2 Tbsp. butter 1/4 c. flour 1/4 c. sugar 2 Tbsp. oats 1/2 tsp. vanilla 1/2 tsp. cinnamon
Directions:
A quick little coffee cake rich with cinnamon with a crunchy streusel topping. Preheat oven to 350°F. Spray an 8x8 square baking pan with nonstick spray. In a large bowl, cream butter and sugar until well blended. Add vanilla. Beat in eggs one at a time. In a medium bowl, sift together flour, cornstarch, cinnamon, and baking powder. (Don't skip this step; the cornstarch has a tendency to clump.) Add dry ingredients to butter-sugar mixture. Add milk. When the batter is smooth, spread it into the prepared 8x8 square baking pan. In a small bowl, combine cold butter with flour, sugar, oats, vanilla and cinnamon. Work with your fingers until combined. Sprinkle on top of waiting batter. Bake at 350°F for 45 min. or until a toothpick inserted into the center comes out clean.
