Water Chestnut Rumaki

Ingredients:

1 8oz. can whole water chestnuts
 1 lb. bacon (sliced in half)
 1/4 c. mayo
 1/2 c. light brown sugar
 1/4 c. chili sauce


Directions:
These little bites are always a hit. Featured at the 2009 Uwchlan Hills Teacher Appreciation Luncheon ("UH-loha! Luau") Preheat oven to 350°F. Line a broiler pan underneath with foil. Wrap each water chestnut in bacon strip, place rolls seam-side down on broiler pan. Bake 20 min. at 350°F. Flip rolls. Bake 20 more minutes. In a small saucepan, combine mayo, brown sugar and chili sauce over medium low heat until it bubbles, stirring occasionally. 

 Spear each bacon roll with a toothpick after they come out of the oven. Serve the sauce on the side for dipping.
