2 bags mixed green lettuce like spring mix
2 Tablespoons olive oil
1/2 tsp salt
1/2 tsp pepper
1/2 cans mandarin oranges, drained
Dressing
2/3 cup sugar
1 tsp paprika
1/4 tsp. salt
1 tsp dry mustard
1 tsp. poppy seeds
1/3 cup honey
1/3 cup vinegar
1 Tablespoon lemon juice
1 tsp. minced yellow onion
1 cup salad oil
Directions:
A simple, elegant green salad that adds a nice light touch to a summer supper. Featured at the 2009 Uwchlan Hills Teacher Appreciation Luncheon ("UH-loha! Luau")
Note: The dressing can be made ahead (although it’s best fresh), but don’t dress the greens until just ready to serve.
Season lettuce with olive oil, salt and pepper. Add oranges.
In a separate bowl, whisk together all the dressing ingredients.
