3/4 lb medium shrimp
2 tsp butter
1/2 med onion, sliced (1c)
1/2 c tomato paste
1 c water
1 Tbsp fresh thyme (2 tsp dry)
1/2 tsp crushed red pepper
1 tsp sugar
salt, pepper
Directions:
Give them a taste of the islands with this piquant shrimp dish. Serve with rice and peas. And maybe a strawberry daquiri would be nice...
With a sharp knife, devein shrimp. Cut shrimp into 1/2 inch (1 cm) pieces.
Heat butter in skillet, saute onions on medium heat for 5 minutes without browning.
Mix tomato paste with water, add to skillet. Add shrimp, thyme, red pepper. Simmer 5 minutes. Sprinkle on sugar, then add salt and pepper to taste. Mix well.
Serve over rice and peas.
