Lemon Frosting


Ingredients:
1/3 cup soft butter or margarine 1/8 tsp. salt About 3 cups sifted confectioner's sugar About 1/8 to 1/4 cup lemon juice
Directions:
A light lemony frosting - great for a cake for a garden party or high tea. Yield: enough frosting for a two-layer 8-inch or 9-inch cake, or a 9x9x2 cake With an electric mixer on medium speed (or with a spoon), thoroughly mix butter with salt and 1 cup confectioner's sugar until light and fluffy. Add remaining sugar and lemon juice alternately, beating until very smooth and of spreading consistency.
