Mocha Frosting


Ingredients:
1/3 cup soft butter or margarine 1/8 tsp. salt 1 lb. confectioner's sugar 1/2 c. cocoa About 1/3 cup coffee 1/2 tsp. vanilla extract
Directions:
A dark rich frosting great for a grown-up chocolate cake. Yield: enough frosting for a two-layer 8-inch or 9-inch cake, or a 9x9x2 cake With an electric mixer on medium speed (or with a spoon), thoroughly mix butter with salt and 1 cup confectioner's sugar until light and fluffy. Sift together remaining sugar and cocoa. Add sugar-cocoa mixture and coffee alternately, beating until very smooth and of spreading consistency; add vanilla.
