Pork Roast with Horseradish and Herbs

Low Sodium Dinner recipes

Ingredients:
One 2 lb. lean boneless pork rib roast or loin roast, all visible fat removed 1 tsp. prepared horseradish 1/2 tsp. dried marjoram, crushed 1/2 tsp. dried basil, crushed 1/2 tsp. dried oregano, crushed
Directions:
Preheat oven to 350 degrees. Place pork roast in a shallow baking pan. Rub horseradish over the surface of the meat. Set aside. In a small bowl, combine remaining ingredients. Sprinkle over roast. Place roast, uncovered, in the oven. Cook for about 1 hour, or until a meat thermometer registers 160 degrees. Let stand 5 mins. Slice to serve. Per Serving: 191 calories, 21g protein, 0g carbs, 11g fat, 4g saturated fat, 1g polyunsaturated fat, 5g monounsaturated fat, 71mg cholesterol, 55mg sodium. Enjoy! -Diana
