2 Tbsp. butter
2 Tbsp. flour
1 1/4 c. whipping cream or heavy cream
4 eggs, separated
1 1/4 c. mild cheddar cheese, grated (use herrgårdsost if you can get it)
raspberry jam
Directions:
Preheat oven to 400°F.
Melt butter in a saucepan. Stir in flour to create a roux. Add cream slowly, stirring constantly. Cook 3 minutes.
Stir in egg yolks, add cheese. Allow to cool slightly.
Beat egg whites to a hard froth. Fold into creamy mixture.
Pour into a greased quiche pan or pie plate. Bake 30 minutes.
Serve lukewarm as a dessert, garnished with berries or jam.
