No-Wheat Chunky Chocolate Squares


Ingredients:
1 1/4 c. rice flour 1 1/4 c. soy flour 1 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. margarine or butter 1 c. brown sugar 3/4 c. corn syrup 2 eggs 1 tsp. vanilla 8 oz. package semisweet chocolate squares 1 c. chopped nuts
Directions:
Satisfy your chocolate brownie jones without wheat with these brownies. Preheat oven to 350°F. In a small bowl, sift together rice and soy flours, baking soda, and salt. In a mixing bowl, cream butter and sugar until light and fluffy. Slowly beat in corn syrup, eggs, and vanilla. Gradually add dry ingredients to batter. Chop chocolate squares into 1/2 inch (1cm) chunks. Stir nuts and half of the chocolate into the batter. Spread batter into an ungreased jelly roll pan (15 1/2 x 10 1/2 in.) Sprinkle with remaining chocolate chunks. Bake at 350°F for 30 min. or until lightly browned. Cool in pan, then cut into squares for serving.
