Orange Bread


Ingredients:
2 cups flour 1/2 tsp. baking soda 2 Tbsp. butter 1 egg 3/4 cup hot water 1 tsp. baking powder 1/2 tsp. salt 1 cup sugar 1/4 cup orange juice grated rind of 1 orange EDITOR'S NOTE: This recipe given to me by my friend Kitty out in Spokane, WA. No high elevation differences in the recipe, though. :-)
Directions:
Sift flour, powder, soda and salt. Beat butter and sugar 'til light and fluffy. Add egg and beat well. Combine o.j., hot water and rind in a separate bowl. Add wet and dry ingredients a little at a time to butter mix, alternating beating after each. Pour batter into greased 9x5x3 inch pan and bake in a preheated 350 degree oven for 50 - 60 mins. Cool on wire rack. Enjoy! -Diana
