Blueberry Coffee Cake


Ingredients:
Topping: 1/4 cup quick rolled oats 1/4 cup sugar 1/4 cup unbleached all-purpose flour 1/2 tsp. cinnamon 2 Tbsp. margarine or butter Cake: 2 cups unbleached all-purpose flour 1/2 cup sugar 1/4 cup quick rolled oats 3 tsp. baking powder 1/2 tsp. salt 1/3 cup margarine or butter, chilled 1 cup milk 1/2 tsp. vanilla 1 egg, slightly beaten 1 cup fresh or frozen blueberries
Directions:
A delightful treat for coffeetime. Yield: 9 servings Heat oven to 350 degrees. Grease and flour an 8-inch or 9-inch square pan. In a small bowl, combine all topping ingredients until crumbly; set aside. Lightly spoon flour into measuring cup; level off. In large bowl, combine 2 cups flour, 1/2 cup sugar, 1/4 cup rolled oats, baking powder and salt; blend well. Using a pastry blender or fork, cut in 1/3 cup margarine until mixture is crumbly. Add milk, vanilla and egg; mix well. Fold in blueberries. Spread batter in greased and floured pan. Sprinkle topping evenly over cake. Bake at 350 degrees for 35 to 45 mins. or until toothpick inserted in center comes out clean. Cool slightly; cut into squares. Serve warm. Enjoy! -Diana
