You can keep your hot dog, give me a quesadilla. Simple and quick to prepare, fun to eat, delicious and nutritious.
Yield: 1 quesadilla per person
Prepare your cooking surface - start the charcoal, fire up the wood, light the propane...any heat source will do.
Lay a tortilla on the griddle or even directly on the grill if the mesh is small enough. Sprinkle with cheese, dot with cooked chicken pieces. Drizzle with a little salsa if desired. Top with a second tortilla.
After it's cooked for a little while (how long will depend on how hot your fire is), flip it. The bottom should be browned in spots, and a little crispy. Let it cook on the other side for a bit, then remove to a plate. Cut into wedges if desired.
