This is an easy dish to prepare fireside and gives an Asian flair to a campout dinner.
Yield: 5 servings
In a saucepan, heat 2-3 c. water to boiling (or nearly so). Remove from heat. Add noodles to water, cover, and let stand 10 min. (or what it says on the package - it'll be less for finer noodles of course. Just like you don't want to cook angel hair as long as you cook linguine or you'll get a sticky mess.) When noodles are tender, remove from water and place in bowl. Stir peanut butter and soy sauce into hot noodles to coat.
Plus you can cook your sugar-snap peas alongside if you put them in the hot water with the noodles - so efficient! We had it with chicken-on-a-stick, always a hit.
