2 eggs
1/2 c. milk
breadcrumbs
Directions:
When my mother-in-law's bent for exotic cooking gets out of hand, it's become a family joke to ask her, "Don't you ever make anything regular, like meatloaf?" Here's regular meatloaf.
You'll get a smaller meatloaf with just the 1 lb. of ground meat, but it'll feed a family of 5. As long as there's mashed potatoes too.
For a meal on the lighter side, try using ground turkey. (Ground chicken ends up coming out a funny color, so we prefer ground turkey.)
Preheat oven to 350°F.
(Remove your rings, this is going to get messy.)
In a bowl, combine ground meat, eggs, milk and breadcrumbs with your hands. Add just enough breadcrumbs so that the mixture isn't gloppy. (It helps if you have an assistant here, so that you don't have to get your messy hands on the breadcrumbs container.)
Place meat mixture in a loaf pan. (Don't worry about greasing it with nonstick if you're using beef.)
Bake at 350°F for 1 hour.
Serve with mashed potatoes and a vegetable.
