Mom's Potato Soup
American Soup Recipes
Ingredients:
1/2 c. chopped onion 2 Tbsp. butter 4 medium potatoes, diced 2 medium carrots, diced 1 stalk celery, diced 1 1/2 tsp. salt 1 c. water 1/4 c. flour 1 tsp. pepper 1 1/2 tsp. paprika 1 c. sour cream 2 1/2 c. milk
Directions:
Serve with a crusty bread for a delicious supper on a cool night.
Sauté onion in butter until tender. Add potatoes, carrots, celery, salt and water. Cover and simmer until vegetables are tender. Blend together flour, paprika, pepper and sour cream until smooth. Stir in potato mixture. Add milk and heat thoroughly, stirring constantly. If you like, add 1 1/2 c. of green peas just before serving.
