A simple preparation that really brings out the delicious side of fresh zucchini.
In a skillet, heat olive oil over medium heat.
Peel and slice garlic. Add to skillet. Saute a minute or two, until garlic starts to soften. Meanwhile, slice zucchini into thick slices (discard the ends).
Add zucchini to the skillet.
Sprinkle with salt and Italian seasoning.
Add chicken stock and cover pan.
Cook about 5-7 minutes, until the green of the zucchini brightens and the flesh begins to soften.
