3 c. chicken broth or stock
1/2 to 3/4 lb. boneless chicken breast
1 c. tiny pasta
1 Tbsp. cornstarch
2 carrots
1 medium onion
salt and pepper to taste
parsley for garnish
Directions:
Quick homemade soup - good for what ails you.
In a large saucepan, heat chicken stock.
Cut chicken into small bite-sized pieces. Toss in cornstarch.
Bring stock to a boil. Add chicken.
Peel carrots and cut into dimes. Dice onion. Add to pot.
Reduce heat and simmer 10 minutes.
Return to a boil and add pasta. Allow to boil until pasta is tender.
Salt and pepper to taste.
Sprinkle with a bit of parsley and serve.
