3 Tbsp. lemon juice (juice of 1 lemon)
1/2 tsp. salt
pepper to taste
3 Tbsp. olive oil
1 1/4 lb. tomatoes
6 oz. mozzarella cheese
2 Tbsp. fresh basil leaves
A super summer salad – it really showcases great tomatoes. Use as fresh ingredients as you can – farm stand tomatoes, fresh mozzarella. Add an ear of corn and some good country bread and it's a perfect summer dinner!
In a small bowl, whisk together lemon juice, salt, pepper, and olive oil.
Slice tomatoes into thick slices. (If you're using plum tomatoes, cut wedges; if you're using cherry tomatoes, cut them in half.) Slice mozzarella into thick slices.
On a fancy platter, arrange the tomatoes and cheese in an alternating pattern. Stir dressing to combine again, then drizzle dressing over tomatoes. Sprinkle with shredded fresh basil leaves.
