1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. (2 sticks) butter, softened
3/4 c. sugar
3/4 c. brown sugar
2 eggs
1 tsp. vanilla extract
1/2 tsp. orange extract
2 1/2 c. oats
1 11oz. package (1 2/3 c.) butterscotch chips
Directions:
A chewy, sweet after school snack. Oatmeal means it's healthy, right? A fun change of pace from chocolate chip...
Yield: 5 doz. cookies
Preheat oven to 375°F.
In a mixing bowl, cream butter until light and fluffy. Add sugars. Beat well.
In a medium bowl, sift together dry ingredients: flour, baking soda, cinnamon, salt.
Add eggs and extracts (vanilla and orange) to the butter mixture.
Gradually add flour mixture to batter.
Stir in oats and chips.
Drop by spoonfuls onto baking sheets and bake at 375°F for 7-8 minutes, until golden brown on the edges and no longer shiny and wet on the top.
