1/2 c. jam
1/3 c. sugar
1 1/4 c. whipping cream
Who doesn't like parfaits? Yummy layers of deliciousness!
Note on egg safety: If you don't have access to eggs that are free from salmonella risk, use an egg substitute like Egg Beaters.
Whip eggs with sugar until light and fluffy. Carefully blend in the jam.
In a separate bowl, whip cream.
In a clear glass (wine glasses are dramatic, even champagne flutes if they're wide enough for a spoon...), place a layer of cream, then a layer of the jam mixture. Continue alternating layers up the glass.
