2 c. bran flakes
1 c. milk
1/2 c. vegetable oil
2 eggs, slightly beaten
1/3 c. sugar
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
A little butter, a little jam: make these hearty muffins a delicious part of your healthy breakfast.
Yield: 12 muffins
Preheat oven to 375°F.
In a medium bowl, combine bran flakes, milk, oil, and eggs. A mixer is overkill on this, just use a spoon.
Add sugar, flour, salt, and baking powder. (If your baking powder has a tendency to clump, sift the dry ingredients together before adding.) Stir only until just combined.
Bake at 375°F for 20-25 min., or until golden brown.
Prepare muffin tins, either by spraying them with nonstick spray or by lining them with muffin papers. Spoon batter into prepared tins.
