2-3 Tbsp. olive oil
4 hot Italian sausages
4 medium sized red potatoes
3 cloves garlic, peeled
fresh ground black pepper
dried Italian seasoning
Editor's Note: Last Saturday I was watching "Lidia's Italy" with Gretchen (for those not in the know, it's a cooking show hosted by
Lidia Bastianich) and Lidia was making a great-looking dish of sliced red potatoes and sausage, and garlic was in it. However, Gretchen and I were talking about very important things (food, the Phillies, where to go shopping, life, HTML, and other stuff), so we really didn't pay enough attention. Today I wanted to recreate the dish and was unsure, so Gretchen and I hashed it out. Here goes:
Slice the red potatoes, peel the garlic, and pierce the sausages with a fork.
In a large heavy frying pan, heat 2 or 3 Tablespoons of olive oil over medium high heat.
Cook the potatoes in the oil, adding some black pepper and dried Italian seasoning. Cook until they are beginning to brown.
Move the potatoes over in the pan and add the sausages. Brown the potatoes and the sausages, turning the sausages to cook evenly.
While you are browning the sausages, smash the garlic cloves with the flat side of a chef's knife and then add them to the pan. Continue cooking it all until the sausages are cooked through and the potatoes are cooked nice and brown. Remove to a platter and serve. Serves 4. Yum. Enjoy! -Diana
