1 c. brown sugar
3/4 c. margarine
2 egg whites
2 tsp. vanilla
1 15oz. can chickpeas (that'd be the sneaky bit)
2 c. chocolate chips
2 c. flour
1/2 c. old-fashioned oats
1 tsp. baking soda
1/4 tsp. salt
OK, I saw it on Oprah and just had to try it out. They do taste healthy, but the kids did love them. Very moist and chewy cookie.
Preheat oven to 350°F.
In a large bowl, cream margarine and sugar until smooth. Beat in egg whites, vanilla, oats and then chickpeas. (I know!) Stir in chocolate chips.
Sift together flour, baking soda, and salt. Add to batter and beat until it starts to act like cookie dough.
Prepare a baking sheet by spraying it with nonstick spray or line it with baking parchment. Drop dough by spoonfuls onto the baking sheet, about 2 inches apart. Press gently with fork to flatten.
Bake at 350°F until golden brown and just set, 11 - 13 min. Remove to a rack to cool completely. Or let the kids eat them as soon as they won't burn their fingers.
These moist cookies just keep getting chewier - Store in an airtight container up to 3 days. My thinking is that they'll be long gone before we knock up against that deadline!
