Apple Pancake (Appelpfannkuchen)

1 c. milk
1 c. flour
1 tsp. vanilla
2 Tbsp. butter
2 c. sliced apples
1 tsp. cinnamon
1/8 tsp. nutmeg
1/3 c. brown sugar
powdered sugar for dusting
This baked, custardy pancake is rich with spiced apples. Perfect for a fall brunch.
You will need:
• some time to let the batter stand
• a skillet that can go in the oven
In a large mixing bowl, combine eggs, milk, flour, and vanilla. Whisk until just blended. Set aside and let stand 20 minutes.
Preheat oven to 450°F.
In an ovenproof skillet, melt butter over high heat. Add apples, cinnamon, nutmeg, and salt. Stir frequently, cooking until the apples are softened.
Reduce heat to medium high and add the brown sugar. Cook, stirring, until apples are carmelized and very soft. Take care not to let the sugar burn as it will become bitter.
Working very quickly (so as to not let apples/sugar burn), pour the batter evenly over apples. Transfer the skillet to the hot oven.
Bake at 450°F for 15 minutes or until golden brown and puffed up.
Sprinkle with powdered sugar and serve.
