pumpkin seeds from one jack-o-lantern
1-2 Tbsp. vegetable oil
salt and pepper to taste
Directions:
It's time to get ready for Halloween - take the time to pull the seeds from the gloppy mess of the jack-o-lantern carving and you'll have a tasty treat.
Preheat oven to 300°F.
Remove seeds and all the stringy pulp from the pumpkin or squash.
Using your fingers, work the seeds out of the pulp. Discard pulp.
Place seeds in a colander and rinse well.
Place seeds in a medium bowl and add oil. Toss to coat all the seeds with oil.
Add salt and pepper and toss to season all the seeds.
Spread seeds on a baking sheet in a single layer. Place in a 300°F oven and bake 15 minutes.
Remove from oven, let cool as long as you can stand it. Enjoy!
