1 large onion
2 Tbsp. butter
1 tsp. curry powder
1 1/2 tsp. salt
2 c. pumpkin puree
2 c. heavy cream
2 1/2 c. chicken stock
This soup will warm you to your toes - great for an autumn evening. Try getting fancy and serve in a hollowed out pumpkin.
Yield: 6 servings
(It just so happened that we had a pumpkin that cooked up hard-shelled...it just begged for trying some fancy autumn soup.)
In a large saucepan, heat butter over medium heat.
While butter is melting, chop onion. Add to butter. Sauté until onion is softened and translucent.
Add curry powder, salt. Stir in pumpkin, cream, and chicken stock. (If you're looking to lighten up on calories, use milk instead of cream.)
Heat until piping hot.
