Cheesy Burrito Bake

Ingredients:
2 c. cooked chicken 2 Tbsp. oil 1 packet Cheesey Taco seasoning mix 3/4 c. milk 1 c. pumpkin puree 1 3/4 c. shredded monterey jack cheese (divided) 8 tortillas
Directions:
Turn Leftover Night into a Mexican fiesta! This Mexican inspired meal comes together in about 30 minutes and even includes "sneaky vegetables." In a large skillet, heat oil over medium heat. Add chicken and stir to coat chicken. Let sizzle 1-2 min. Sprinkle with taco seasoning mix. (We used Cheesy Taco flavor - use your favorite.) Stir in milk. Stir in pumpkin puree. Allow to cook 2 min. Add 3/4 c. monterey jack cheese. Stir and allow to cook until melted. Reduce heat to low. Preheat oven to 300°F. Spray a baking dish with nonstick spray. Heat one tortilla. Warm tortillas will roll nice and neat, while cold ones will crack and break. (My stove has a "warming zone" - I set the tortilla there for just a minute and it softens up nicely.) Lay warm tortilla on a plate. Spoon 1/4 to 1/2 c. of filling mixture onto the tortilla. Fold sides in and then roll, like a burrito. Place in baking dish. Repeat until only about 1/4 c. of filling remains. Drizzle remaining filling over the top of the filled burritos in the pan. Top with 1 c. shredded monterey jack cheese. Bake at 300°F for 10 min. until cheese is nicely melted...or until everybody's ready to come to table. Serve with rice. Mexican rice if you've got it.
