Ginger Cookies

Ingredients:
3/4 cup (that's a stick and a half) butter 1 cup sugar 1 egg 1/4 cup dark molasses 2 cups sifted flour 2 tsp. baking soda 1 tsp. cinnamon 1 tsp. ginger 1 tsp. cloves Extra sugar for rolling cookies

Editor's Note: These cookies are great for a cookie swap or other holiday party. They look like ginger snaps, but are actually a softer cookie. They have a lot of flavor, they last for a few weeks in an airtight container, and they ship well. Enough said. Preheat oven to 350°F. In a stand mixer, cream together butter and sugar. Add egg and molasses. In a separate bowl, sift the remaining ingredients (flour, baking soda, cinnamon, ginger, cloves) together, then add to the sugar mix in the mixer. Blend together. Form into balls the size of a small walnut. Roll in granulated sugar, then place cookies two inches apart on a greased cookie sheet. Bake at 350°F for 10 to 12 minutes. Enjoy! -Diana
